Simple Persian Aash (Bean Soup) Recipe

Ingredients
- 1/2 cup pinto beans dried
- 1/4 cup white dried, navy or cannellini
- 1/4 cup chickpeas dried
- 1/2 cup lentils dried
- 1/2 cup rice uncooked, white or brown
- 2 tbsp chopped onion
- 1 tbsp garlic powder
- 1 tbsp ground turmeric
- 2 tsp salt
- 2 tsp black pepper
- 1/2 cup spinach chopped
- 1/2 cup parsley chopped
- 1/2 cup dill chopped
- 1/4 cup chives chopped
- 1 tbsp mint leaves chopped
- 6 cups water
Instructions

Pour all ingredients into slow cooker

Set slow cooker to 8-10 hours on low

Garnish with sautéed onions, sautéed garlic, and/or sautéed mint

Garnish kashk or vinegar (not both!!!)
