Simple Persian Aash (Bean Soup) Recipe

Ingredients

  • 1/2 cup pinto beans dried
  • 1/4 cup white dried, navy or cannellini
  • 1/4 cup chickpeas dried
  • 1/2 cup lentils dried
  • 1/2 cup rice uncooked, white or brown
  • 2 tbsp chopped onion
  • 1 tbsp garlic powder
  • 1 tbsp ground turmeric
  • 2 tsp salt
  • 2 tsp black pepper
  • 1/2 cup spinach chopped
  • 1/2 cup parsley chopped
  • 1/2 cup dill chopped
  • 1/4 cup chives chopped
  • 1 tbsp mint leaves chopped
  • 6 cups water

Instructions

  1. Pour all ingredients into slow cooker

  2. Set slow cooker to 8-10 hours on low

  3. Garnish with sautéed onions, sautéed garlic, and/or sautéed mint

  4. Garnish kashk or vinegar (not both!!!)

  5. Enjoy
